Syrup was ready at 45 minute intervals today.\u00a0 That was a first.\u00a0 There is not time to do much in between batches.\u00a0 A few cycles of fire, check pumps, adjust sap level in pan then take off another batch.\u00a0 It keeps you very busy.\u00a0 12 batches into the milk can.\u00a0 All 625 gallons cooked through.\u00a0 \u00a0 With the temperature reaching the 50s we wanted to get all the sap cooked.\u00a0 Sap doesn\u2019t keep well when it gets warm.<\/p>\n
Into the woods by 6:00 AM.\u00a0 R\/O going by 7:05 AM.\u00a0 It ran 7 \u00bd hours today.\u00a0 Served us well.\u00a0 Went to 6\u00b0 Brix.\u00a0 Pressure held at 400 PSI.\u00a0 Had good boils.\u00a0 But nitre was going to drive the day:\u00a0 if we get too much of a nite build up in the syrup pan we can\u2019t boil hard.\u00a0 By batch 6 we had fair amount of nitre but boiling was still good.\u00a0 Nitre continued to accumulate, but boils stayed good so pushed on until done.<\/p>\n
