Into the woods by 7:45 AM. \u00a0 Cleaned the syrup pan on the evaporator. \u00a0 By 8:30 had the fire going. \u00a0By 9:00 \u00a0running sap in. \u00a0Our goal was to empty the 225 gallons storage tank. \u00a0 By 7:00 PM we were empty. \u00a0That was 10 hours of cooking. \u00a0A good day. \u00a0Made possible by dry wood. \u00a0Gathered many months before to have it handy at the door. \u00a0The wood is at least two years old so it nice and dry. \u00a0It burns hot and gives good boils. \u00a0Its nice to see rolling boils on the entire flu pan.<\/p>\n

And old school because of trouble with the R\/O. \u00a0Well mostly trouble with the membrane on the R\/O. \u00a0We are waiting for the manufacturer to get back to us about what to do. \u00a0 But we had to start cooking while waiting.<\/p>\n

About 30 overnight. \u00a0Started cloudy. Sun appeared by 11:00 AM for few hours. \u00a0Temperature rose quickly to the 50s. \u00a0Trees did not run much. \u00a0 \u00a0Overnight about 30 again. Tomorrow a little cooler.<\/p>\n

Tomorrow will be a busy day. \u00a0 Water run in the morning. \u00a0Cook all day to empty the next 225 gallons of sap from Thursday. \u00a0Hope to finish that by 7:00 or 8:00 PM. \u00a0 We must bottle. \u00a0We have 2 milk cans of syrup to finish and bottle. \u00a0And collect about 3:00 PM.<\/p>\n","protected":false},"excerpt":{"rendered":"
